To make, put 1kg of Extra Moist Chocolate Muffin Mix, 500g of water and 300g of vegetable oil in a mixer and mix slowly for 1 minute then at medium speed for 3 - 4 minutes. Scoop into a muffin tray or cases and bake at 190 - 200 degrees for 30 - 35 minutes.

Just add water to this complete chocolate cookie mix to make delicious soft, chewy, American-style, chocolate cookies. With the mix designed to hold up to 20% inclusions you can easily add an extra chocolate taste and texture with chocolate chunks if desired.

These are the perfect alternative to frozen cookie pucks as both the dough and the baked cookies are freeze/thaw stable.

To prepare, place 1kg of chocolate cookie mix and any inclusions in the bowl of a machine mixer with the paddle attachment. Add 120g of water  and mix on slow speed until a dough is formed. Form into cookie pucks on a baking tray and bake for 14 - 16 minutes at 170 degrees.

Prairie Vanilla Cookie Mix 

Based on an authentic American cookie recipe, this mix produces cookies with an attractive cracked surface, subtle natural vanilla flavour and an initial crisp bite followed by a chewy centre. The mix is specially formulated to handle inclusions and flavourings so you can add your own signature if desired.

To make, blend 1kg of Prairie Vanilla Cookie Mix with 150g of margarine or butter on a medium speed for 3 - 5 minutes then add 60ml water and any inclusions blending until mixed through. Roll the batter out, cut into cookie shapes and then bake at 200 degrees for 12 minutes.

This chocolate sponge cake mix requires only the addition of water to produce light, soft sponge cake with a subtle chocolate flavour. The mix has been specially formulated for pliability and resists cracking making it perfect for Swiss rolls and roulades as well as regular chocolate sponge cakes and chocolate cupcakes.

To make, gradually add 520g of water to 1kg of Super Sponge mix while mixing on slow speed for 1 minute. Scrape down and mix for a further 10 minutes on fast speed. Deposit 180g of batter per six inch round tin then bake for 25-30 minutes at 180 degrees.

Bake at 180 degrees (160 degrees if fan assisted) giving 50 - 60 minutes for an 800g gateaux, 40 - 50 minutes for a 400g loaf cake and 30 - 35 minutes for a 120g muffin.

Vegan Cake Mix

Mix 1kg of vegan cake mix with 450g of water and 300g of vegetable oil for 3 - 4 minutes at a medium speed. Fill tins with the batter and press the surface down 1cm with an oiled scraper. Bake for 10 - 15 minutes then open the damper and bake for a further 30 minutes.
